RECIPE || Gluten Free Mini Doughnut Muffins


Baking is my recluse, my getaway from the stress of the day. Just to have fun, experiment, and be me. You ever feel like that? Well here is a little yummy recipe that I came across and tweaked a little to make d'licious (gluten-free) mini muffins. Enjoy!


These are the gluten and diary free muffins, and they are really quite delicious!
I inserted frosting into the middle, decking the outside with glaze and sprinkles.

INGREDIENTS:
2 cups all-purpose flour
3/4 cup white sugar
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 teaspoon salt
3/4 cup milk
2 eggs, beaten
1 teaspoon vanilla extract
1 tablespoon butter
1 cup confectioners’ sugar
2 tablespoons hot water
1/2 teaspoon vanilla extract

INSTRUCTIONS:
1. Preheat oven to 325 degrees F (165 Degrees C). Lightly grease a mini muffin tin (if you prefer a donut pan, go ahead).

2. In a large bowl, mix together flour, sugar, baking powder, nutmeg, cinnamon, and salt.

3. Stir in milk, eggs, vanilla and butter. Beat together until well blended.

4. Next, fill each mini muffin cup (or donut cup) to about ¾ full.
5. Bake 8 to 10 minutes, or until doughnuts spring back when touched. Allow to cool slightly before moving from pan.

6. To make the glaze, mix together confectioner’s sugar, hot water and vanilla extract in a small bowl. Dip mini muffins (or donuts) into glaze when serving. Add extra garnishes such as sprinkles, fresh fruit, jams and jellies or other oddities you might have in your kitchen.
7. Now consume, but be sure not to eat them all in one sitting. 
:: SIDE NOTE ::
For those with gluten or lactose intolerance (such as I), switch out the flour for rice flour {or with your favorite alternative flour or combination of flours), switch out the milk for almond milk (soy milk, etc) and the sugar for sucanat or honey crystals (I would not recommened using Splenda, Stevia, or other alternative powdering sugars because of the consistency and chemically sweet taste). Although not quite as fluffy as the original recipe, it is still just as delicious.
